Leslie's Winter Recipes to Celebrate the End of Tax Season

As we enter the end of tax season, it's easy to get caught up in numbers, deductions, and paperwork. However, amidst the hustle and bustle, indulging in comforting and nourishing meals can make all the difference. 


These easy-to-prepare, delicious meals are my family’s personal favorites during these cold months. 


Instant Pot Split Pea Soup:

Nothing warms the heart quite like a bowl of hearty soup, and my Instant Pot Split Pea Soup is no exception. With just a handful of simple ingredients and the convenience of the Instant Pot, you can whip up a batch of this comforting dish in no time.


1 onion, chopped

3 stalks celery, chopped

2 bay leaves ¼ tsp Thyme (dried)

1 T. Olive oil

2 T. butter

Turn on Instant Pot to “Saute”

Once heated, saute the above ingredients until onions are translucent


Add:

3 carrots, chopped

3 tsp. minces garlic

1 cup diced ham

6 cups chicken broth

1 bag split peas, rinsed and sorted


Stir and Bring to a simmer.

Put the lid on the Instant Pot, Turn steam release knob to Sealing Position.

Cancel the Saute Function and Choose Pressure Cook/Manual for 18 minutes.

Once done, allow the pot to sit for 15 minutes, untouched.

After 15 min, release the steam by turning to Venting Position.


Once cooked, serve this soul-warming soup with a side of crusty baguette and a refreshing salad! 


Crisp Side Salad:

Romain & Butter Lettuce

Blue Cheese Crumbles

Chopped Honeycrisp or Fuji applie

Chopped raw pecans


I like Balsamic Vinaigrette dressing!



Crock Pot Pork Chops:

For a hands-off meal that's as comforting as it is delicious, Crock Pot Pork Chops are the way to go. These tender, flavorful pork chops simmer away in the crock pot, soaking up all the savory goodness of cream of mushroom soup.


Brown bone-in pork chops on both sides in skillet on high heat, season with salt & pepper

Place in crock pot, add one can of cream of mushroom soup (or your choice of cream soup)

Cover and cook for 6-8 hours on low.


When it's time to serve, plate the pork chops over a bed of fluffy brown rice and accompany them with a generous helping of the aforementioned salad. 



Taking a moment to savor a homemade meal can provide much-needed comfort and nourishment. My favorite tax-time recipes offer a delightful reprieve from the stress of paperwork and deadlines, allowing you to indulge in the simple pleasure of good food shared with loved ones.
